A good, quick topping if you don't have a lot of time is to get a jar of low-sugar strawberry preserves. Put the preserves in a saucepan and heat on low until the preserves have liquefied. This is really good on ice cream, too. Works great for a banana split.

I always use the low sugar preserves because they're not nearly as sweet, and the strawberry flavor is much more pronounced. After all, why bother having a strawberry topping for anything if it doesn't taste like actual strawberries?

You can also use the preserves as a base, and add fresh strawberry halves to it.

If I'm doing a strawberry sauce, I'm using frozen berries, unless I have the time to fix fresh ones. For a cooked sauce, as for a cheesecake, frozen berries work just fine, and they're already hulled and cleaned.

I usually just get frozen strawberry halves and cook them down with a little sugar until they form a sauce. It doesn't take much sugar, and since the strawberries are frozen, they produce their own liquid as they cook down. It takes about 15 or 20 minutes to do the sauce, and it's great over a cheesecake, pound cake or anything else you want to use it for.
