If I need dark meat chicken for a recipe, I generally use chicken thighs instead of drumsticks. By way of a tip, I highly recommend using those commercial chicken breading mixes that coat chicken pieces in a bag. I think people tend to forget these coating mixes are still around and have some really interesting flavors these days.

I have found that crowding the baking pan with chicken legs can cause them to be more steamed than baked. I try to leave a definite space between each chicken leg before it goes into the oven. If the legs are pressed together, the area where they meet won't develop a crisp skin because of the steam.
