I've never been to a potluck dinner where there weren't at least six or seven chicken casseroles. They are popular. I've had them with water chestnuts inside, baked with crumbled potato chips on top, cheese crackers and everything else.

One popular dish is the Veg-All casserole. That takes a couple of cans of drained, rinsed mixed vegetables, cream of whatever soup, chicken breast and sour cream.

I also like cheesy chicken casserole which uses a jar of cheese spread and a small can of green chiles. That usually has tortilla chips crumbled on top.

One of my favorite chicken breast casseroles is a chicken and wild rice casserole. This uses cooked wild and white rice, cream of mushroom soup, onion, sour cream and chicken broth. When you combine it, it's delicious.

I have also discovered panko crumbs and use them to top everything. They are so crisp and crunchy and they brown better than crackers. I like to mix them with olive oil and grated Parmesan for a topping for this casserole. It really gives it a nice crust and a very more-ish texture. Everyone loves it, and it's super easy to make. It's my go-to potluck dish.
