Huevos divorciados, literally "divorced eggs," is a Mexican breakfast dish consisting of eggs, sauces and refried beans or chilaquiles. This meal can be altered to suit a number of different tastes by substituting sauces or other ingredients, or by changing the way the eggs are cooked. Mexican food aficionados are likely to enjoy this meal as an alternative to more traditional breakfast egg dishes.

The presentation of the dish gives it the name huevos divorciados. Rather than being beaten together in an omelet style, or even touching on the plate, the eggs are separated. Each egg is also smothered in a different kind of sauce, with a side item placed between them. This Mexican breakfast can be served without side dishes; a beverage, typically orange juice, is all that is required.

Huevos divorciados ingredients include two eggs, two different types of sauces and refried beans or chilaquiles. Optional ingredients include a soft tortilla to serve the breakfast on, tortilla chips and cheese. The eggs may be cooked sunny side up or over easy.

Like many other Mexican dishes, huevos divorciados contains sauces. Both red and green sauces are used in this dish. These sauces can be made from scratch, or store-bought salsas may be used. Green salsa, or salsa verde, is typically mild, while red salsa is available in mild, medium and hot varieties. Diners who do not care for overly spicy food may choose a mild or medium red salsa, while others may prefer the contrasting tastes of a mild salsa verde and hot red salsa.

The simplest side item to include in huevos divorciados is refried beans, which may be homemade or from a can. If a tortilla is used, it should be placed on the plate first. The warm beans can then be spooned down the middle of the tortilla or bare plate. Crispy tortilla chips placed into the beans add a different texture to the meal and are visually pleasing.

Instead of refried beans, chilaquiles may be used. Chilaquiles are fried tortilla pieces that are cooked in salsa until they are soft. The salsa may be either red or green, according to personal taste. The prepared chilaquiles are then spooned down the center of the dish in place of the refried beans. Crispy tortilla chips are not added in this version of huevos divorciados.

After the beans or chilaquiles are laid in place, one egg should be positioned on either side. The prepared red salsa should be poured over the egg on one side, and the green salsa over the other egg. Shredded cheese may be added to the dish as a finishing touch, but this is not required.
