I make a very good cucumber, parsley and sour cream salsa. It's a healthier alternative to cheese based dips for parties and it tastes great. I serve it with tortilla chips and pita chips usually. Aside from humus, my cucumber and parsley salsa is a hit at every event. Even my sister loves it and she normally stays far away from veggies.

It's easy to make too. I just chop cucumbers, parsley, tomato, onion and mix it with sour cream and some lemon juice. It takes all of five minutes to put together.

@burcinc- Have you ever had chimichurri sauce? It has a lot of parsley in it but it's very good. It's an excellent sauce for meat and can also be used as a salsa or dip.

Chimichurri sauce is made with about a cup of parsley and a cup of cilantro along with other ingredients like garlic, onion, pepper, oil, vinegar and lemon juice. It's zesty and it can also be made spicy. I personally love it.

So I think that parsley as a main ingredient for salsa does work. Of course, the accompanying ingredients and flavors are important too.

I do like parsley but I don't want a salsa that has too much of it. Parsley has a very unique and strong flavor and scent. If used too much, it tends to overwhelm all other flavors in a dish. I would not be able to eat much of a salsa made almost entirely of parsley. I don't mind a salsa that has a little bit of parsley and lots of other ingredients like tomatoes, onions and peppers though.
